Deb's Cauliflower Gratin
Serves 6 to 8
Note: you can prepare one day ahead and reheat
2 lbs. cauliflower (white, green or purple)
1/3 cup whole milk
4 T butter
2 t mustard (French's liquid mustard is fine; Dijon is better)
1/8 t freshly ground nutmeg
1/2 cup grated Parmesan cheese
salt and pepper to taste
-Cut the cauliflower into florets and cook uncovered in boiling water 10-12 minutes, until they have softened.
-Drain and puree cauliflower with the milk, butter, and mustard. Season with nutmeg and salt and pepper to taste
-Place in shallow baking dish and cover with Parmesan cheese.
-Bake in a preheated 350 degree oven for 30 minutes until a golden crust has formed over the top
