1 tsp salt
1/4 cup rice vinegar
4 tsp sugar or sugar substitute
Peel and slide cucumbers. Toss with 1/2 the salt. Let stand 30 min. Discard liquid and pat cucumbers dry with a paper towel. In a 6 in. skillet, combine vinegar and sugar. Heat to boiling until sugar is dissolved. Add 1/2 tsp salt. Toss with cucumbers. Refrigerate at least 1 hour.
