Allison's Baked Mac And Cheese

Allison's Baked Mac And Cheese:
Makes 6 to 8 servings

8 tablespoons (1 stick) unsalted butter
4 tablespoons flour
3 cups milk
3 cups grated sharp or medium cheddar cheese
1/3 cup grated parmesan/asiago cheese
1 teaspoon sea salt
1/2 teaspoon dry mustard 
1/4 teaspoon cayenne pepper
1 pound elbow or penne macaroni
1/2 cup fine dry bread crumbs

In a medium size, heavy saucepan over medium heat, melt butter.  Stir in the flour. When all the flour is absorbed, gradually add milk, stirring constantly. Continue cooking, stirring constantly, until sauce is thickened, four to five minutes. Add the cheeses and continue stirring until they are well blended. Stir in the salt, mustard and cayenne.

In a large bowl, combine cheese sauce and fully cooked and drained macaroni. Lightly grease a shallow 3 quart casserole dish (like pyrex) and transfer the macaroni mixture. Sprinkle the bread crumbs over the macaroni. Bake 30 to 40 minutes in 350 oven until cooked through and the top is golden brow,.

Spoon out for each person and top with a bit of ground pepper or even fresh rosemary if you like.
